1 1/2 cups apple juice
- 2 cups sliced celery (about six stalks)
- 1 sweet red pepper, diced
- 1 tsp cumin
- 1/4 tsp hot pepper flakes
- 2 bunches green onions
- 1 cup instant couscous
- 1/4 cup chopped fresh dill
- 1/2 tsp salt
- mixed salad greens
- 2 tsp bottled vinaigrette salad dressing or to taste
In a medium saucepan, bring apple juice to a boil. Add celery and red pepper; simmer for two minutes. Remove vegetables; set aside.
In the same saucepan, combine juice with cumin and hot pepper flakes. Bring to a boil and simmer for three minutes. Stir in greet onions, couscous, dill and salt.
Cover, remove from heat and let stand for five minutes. Fluff with a fork and spread couscous mixture over mixed salad greens in a shallow dish. Top with celery and red pepper; drizzle lightly with dressing
